Greg Hedrich, a 2004 graduate of the University of Wisconsin-Stout and a 2010 graduate from the University of Wisconsin Madison, is the Operations Manager for LaClare Farms. Hedrich worked for seven years as a high school Technology Education Instructor, and earned his Masters in Educational Leadership and Policy Analysis. Greg was very active in leadership roles both within the school district he worked as well as serving on boards at the state level for Technology Education programming. Greg had been involved with the family’s business operations part-time since 2008 and in 2011, as the business continued to expand, he altered his plans to become a school principal and instead joined the team to help guide the family’s business. The Hedrichs run a large dairy goat operation in Northeast Wisconsin and use their milk to make award winning cheese and other dairy products. In the past three years LaClare Farms has won over 10 awards for their cheeses one being “Best of Show” at the United States Champion Cheese contest. LaClare Farms took top honors out of 1,604 different cheeses from all across the United States. Hedrich’s role is to oversee the current operations of the business and work with their team to finish construction on a new facility and shift their operations to maximize the new space. The new facility is located just 12 miles from the current operation in Pipe, WI, on the eastern shores of Lake Winnebago. All of the young stock will stay at the current facility in Chilton and the new space will allow LaClare Farms to milk goats in the new milking barn and parlor. They will then be able to produce most dairy products, including private label custom products for others, and utilize any milk the customer wishes. The new facility also has the ability to then sell these products and many others in the retail area, cook made-to-order foods in the kitchen space. There will also be a courtyard for people to relax and enjoy the experience.
In the global food markets consumers are paying more attention than ever to where their food comes from. In his role as Operations Manager for his family’s large dairy goat farm, Greg Hedrich is responsible for integrating the enterprise from the stage of raw milk all the way to finished product. LaClare Farms is at the forefront of the dairy goat/cheese industry in Wisconsin, preparing to open a new farmstead dairy plant this spring.
